This recipe was made at the June Community Dinner with Westside Moravian Church. It is cool and refreshing and perfect for summertime. Give it a try this weekend!
Ingredients:
- Bunch of beets
- Feta cheese crumbles - Pecan pieces
- 1/4 c. Brown sugar
In a small fry pan at medium heat sprinkle the sugar in the pan. Allow the sugar to begin to melt. Add pecan pieces to the pan and stir until all the sugar has melted and adhered to the pecans. Set aside to cool.
Shred beets using a hand grater or machine. Sprinkle with feta crumbled and glazed pecans. Dressing is a simple balsamic vinaigrette. 1/4 C Olive Oil + 1/2 C balsamic vinegar. Shake vigorously and add dressing when serving.
