Here's an easy, oil-free sauce or dressing - thanks to Joe Klinkhoff for sharing!
1 c tahini paste
3/4 c lukewarm water
3 cloves garlic
1/4 c lemon juice
1/4 t salt
Using a handheld blender or food processor, combine all the ingredients together. For dressing, add additional water until desired consistency. We recommend letting it sit overnight for flavors to blend.
Consider adding other spices such as cumin for flavoring. Use within seven days.
