On the evening of Wednesday, February 28, the Food Co-Op will hold a Membership Mixer at Roasted, a breakfast and lunch hot spot on the Southside of Bethlehem. We caught up with Co-Owner (and BFC Member) Derek Wallen to ask about his restaurant, local food and community support.

Recently re-opened to rave reviews, Roasted is located on 4^th Street, not far from the Lehigh Campus. The vibe is young and energetic, the food is delicious and the service is excellent. When we asked Derek what makes his restaurant special, he responded, “We have unique breakfast options, an awesome vibe and staff, and everything is fresh and mostly local!”

This proves to be true. With an eclectic menu of traditional and surprising breakfast and lunch fare, as well as a plethora of gluten-free, vegetarian and vegan options – all clearly labeled on the menu – it’s no wonder that the restaurant attracts a broad range of patrons from the local community.

Speaking of community, Derek and the Roasted staff are excited to see the growth that’s happening in their part of town. He explains, “I believe we play a role in the community by providing great breakfast and lunch options, but also by supporting the local business where we source most of our ingredients.”

This is also why Roasted is a supporter of the Bethlehem Food Coop. Derek and his partners love the idea of a community-owned grocery store, as they support their fellow local businesses whenever possible.
