3 Questions with Cachette

On Wednesday, July 13 from 5:30-7:30pm, we'll be enjoying 4 C's (Co-Op, Crepes, Cocktails & Craig (Thatcher!)) at Cachette Bistro & Creperie. We caught up with Cara Paredes from Cachette to ask her about her restaurant, small business in the Lehigh Valley, and her thoughts about the Co-Op.

Cara Paredes1. For someone who is new to eating crepes, or thinks they are only filled with sweet ingredients, what should they know when ordering a crepe at Cachette? What kind of options do they have?

Cachette has a unique menu. We have some appetizers that are great to start with like the house-made frites or the escargot. Then we have a nice array of salads. If you're looking for crepes, then you should go for the BLT, a new item, with a fried egg on top, or Le Poulet, a classic with chicken, gruyere béchamel and asparagus. After dinner, you must try The Classic with Nutella, strawberries and bananas, or Summer Spirit with fresh blueberries and lemon curd.

2. In addition to Cachette, you own and operate Tapas on Main next door, and also Mesa Modern Mexican in downtown Easton. Why do you feel it is important for small business owners such as yourself to support the Co-op and its mission to bring a community-owned grocery store to the downtown? 

The idea of a grocery store in our downtown is genius! We've been waiting for an option besides Giant or the other superstores. A full-service grocery store in our downtown is so important for multiple reasons. It's walkable and accessible to everyone. It sells mainly local products, which is great. It encourages residents to stay in town. When they stay in town, they shop and dine in town, which in turn is best for everyone!

3. What are some of the things you are most looking forward to buying at our co-op grocery store once it opens?

I think we are most excited for the local produce, meat and dairy, but also just having access to a full-service store with all the items you need for everyday life. We eagerly anticipate its opening day.
